KOKIYÒL - The Haitian Donut
Ingredients:
Mush together in one bowl 3 bananas, 5 tbsp of butter, 1/2 cup of sugar (once this is all blended together continue with next step in the same bowl)
Add 1/3 cup of milk, 3 eggs, 1 tsp oil
Put 2 cups of flour in a separate bowl with 1 tsp of salt, 2 tsp of baking powder, 1 tsp of cinnamon, 1 tsp nutmeg - mix
Pour this flour mix into the banana mix (stir)
Add the rest of flour a little at a time (4 cups)
Kneed flour on top of counter (once in a dough ball, return to bowl, cover with towel, and let sit for 30 minutes)
Roll out dough 1/4 inch, cut out circle with plastic cup, then use a medicine cup to cut out donut hole. Heat 2-3 inches of oil to 350-375 degrees and fry. Be sure to have your sugar ready. Once the donuts are golden brown, roll in sugar immediately for sugar to stick - Enjoy!
